INGREDIENTS
- Medium onions, thinly sliced 3 nos
- Garlic cloves 5-6
- Brown bread 4 slices
- Olive oil 2 tbsps
- Medium carrot, thinly sliced 1 no
- Vegetable stock 4 cups
- Salt to taste
- White pepper powder 1/4 tsp
- Grated cheese 1/4 cup
- Chop 3-4 garlic cloves and keep the remaining whole.
- Cut the brown bread into small round slices. Apply one tablespoon olive oil and rub with whole garlic cloves. Toast till crisp.
- Heat the remaining olive oil in a non stick pan, and sauté the onions on medium heat till brown. Drain well. Keep a few slices aside for garnishing.
- To the same oil, add the chopped garlic and sauté till light brown. Add the carrots and sauté for a few minutes.
- Add the vegetable stock and bring it to a boil. Lower heat and let it simmer for 10-15 minutes.
- Add salt and white pepper powder.
- Ladle the soup into individual soup bowls, float the toasted brown bread, top it with grated cheese and fried brown onions and serve hot.
Since the quantity of oil used for frying the onion is minimal, the sliced onion would not become crisp as in the case of traditional French onion soup. However, if available, use dehydrated onions, as they remain crisp.
