- Refined oil 2 tbsp
- Sliced onion 1 + 1/2 tsp
- Chopped carrot 1 tbsp
- Chopped baby corn 1 tbsp
- Chopped broccoli 1 tbsp
- Chopped coriander leaves 1 tsp
- Salt to taste
- Rice water (starch) 1 + 3/4 cups
- Coconut milk (medium strength) 1 tbsp
Garnish:
- Boiled rice 2 tbsp
- Chopped spring onion 3/4 tsp
Method of preparation
- Heat oil in a pan and add onion. Stir-fry over moderate heat until brown.
- Add all ingredients except coconut milk and the garnish. Bring to boil, lower heat and simmer for 4-5 minutes.
- Just before serving, heat thoroughly and remove the pan from heat.
- Pour in the coconut milk. Do not reheat soup after adding coconut milk as it may curdle.
- Taste and adjust seasoning. Garnish with boiled rice and spring onions and serve.
